Bacon Wrapped Dates
These bacon wrapped dates are one of the best appetizers you could make. They will disappear before you know it. So, if you want to try one, grab it off the cookie sheet as it comes out of the oven.
1 lb Bacon
8 oz Medjool Dates (or Deglet Noor) Pitted
4 oz Goat Cheese
Directions:
Slice eat date open, without completely severing the two halves. You’re making a “sub sandwich” type of cut. After cutting all the dates, use a spoon to scoop approximately 1 tsp of goat cheese into each date. This won’t be pretty, and it doesn’t matter. The dates don’t have to close completely. Cut the bacon strips in half, to shorten the length. Wrap the half bacon strips around the dates. Place on aluminum foil covered cookie sheet. Bake at 400º for approximately 25 minutes. Depending on your oven, it may take more or less time. I like them with the edges of the bacon starting to crisp just a bit.

Cut slices of bacon in half to roll up the date:
Rolling the dates:
Bake at 400º for about 25 minutes, give or take.
Get ’em while they’re hot–they WILL disappear!
